Mediterranean Sea Bass
Fillet of sea bass on a bed of pesto-dressed crushed potatoes and crunchy green beans. Finished with a rich sundried tomato and black olive sauce.

Nutrition
Steaming is one of the healthiest ways to cook, and with Esteem’s unique steam-cooking process, meals retain more nutrients and taste than traditional methods.
Independent research by Leatherhead Food International showed that broccoli cooked in packaging with the steam-release valve technology retained more than twice the vitamin C and folic acid compared to traditional catering and cook-chill operations.

Cost
The Esteem fine dining system offers a low capital investment and the potential for significant savings. It reduces labour costs as it’s easy for all catering staff to operate, freeing up resources for other areas. With meals steamed in microwaves, Esteem uses 40% less energy than traditional catering methods.
Meals come with a 5-day shelf life and are distributed securely, whilst the individual meal system helps reduce food waste by allowing for more precise ordering and tracking.

Flexibility
The flexibility of the Esteem system allows for meal orders to be taken just hours before service time as opposed to pre-ordering meals days in advance, which often leads to food waste. Once the order is placed, each meal cooks within 3-6 minutes and plates in just 1-2 minutes.

The Esteem system lets you steam-cook fresh meals consistently in just 3-6 minutes, using top-quality ingredients from Compass Group’s trusted supply chain.
Popular dishes include Saffron Loin of Cod, Hot Smoked Salmon with King Prawn Tagliatelle, and Beef Cheeks in Peppercorn and Madeira Sauce.

Space
Esteem meals are prepared off-site at a dedicated Compass Group Cuisine Centre. The system requires less preparation and space than other methods and allows you to produce fine dining standard food with little more than approved microwaves and a chilled storage system.
