We recently caught up with Foodbuy’s Chief Culinary Officer and Culinary Director of Compass Group UK & Ireland, Nick Vadis, for his expert view on the vital role of consistency and quality in the future of foodservice, and how ready-prepared meals can help.

How ready-prepared meals are part of the solution

For Nick, "the biggest challenge in busy kitchens is driving absolute consistency, day in and day out,” he says.  
 
“With a shrinking labour pool and changing skill levels, it can be difficult to maintain standards. Staff sickness and holidays can also put pressure on culinary resources.” Customers remain blissfully unaware of those challenges, but they still expect a great meal every time.  

 

According to Nick, ready-prepared meals and ready-to-use ingredients, such as sauces or marinated meats, can be an important part of the solution.  

 

“The support of either full dishes or labour-intensive component parts can really help the brigade,” he explains. By reducing pressure on teams, chefs have more time to focus on service, presentation and the overall dining experience, while maintaining consistency across sites.

Consistency is especially important for kitchens that offer the same menu across many locations. As Nick points out, branded restaurant chains are “successful because they deliver safe and consistent food across multiple sites.” Customers trust businesses that serve the same quality time and time again, while still finding creative ways to keep the menu feeling fresh and exciting.
 

Food safety is another area where reliability is fundamental. “It’s paramount and key to a successful offer. There’s no margin for error when it comes to allergens,” says Nick. Keeping things fresh with ready-prepared meals

One of the biggest misconceptions about ready-prepared meals and components is whether they limit a chef’s ability to be creative. When we broached this subject with Nick, his answer was clear: “No. Chefs can be creative in many other ways, like the finishing and serving of the dish.”  
 
In fact, he believes that ready-to-use ingredients actually free chefs from repetitive tasks, and give them more time to get innovative where customers notice it most, like presentation.  

Going green with meal solutions

There are sustainability benefits too. Nick praises ready-to-use meals and components for their capacity to help reduce kitchen food waste and energy use on a significant scale. More consistent preparation and portioning mean fewer resources are wasted, and kitchens can operate more efficiently.  

 

Looking ahead, Nick expects more operators to adopt a hybrid approach that combines scratch cooking with trusted prepared meal solutions. “Many hotel groups have already taken that step whilst still maintaining consistency,” he says. “Foodservice is no different. It will have to evolve to survive in this very competitive landscape.”
